Our bodies deserve the best, so let's treat it that way. This turmeric and bone broth stew provides anti-inflammatory properties, natural collagen, immune and brain support, along with providing an overall satiating meal. This bone broth stew is a great meal prep idea that is both nutrient dense and cost effective. This meal lasts me Monday to Friday, perfect for either a work week or school week. Enjoy!

What you will need

  • One half to a whole onion (sweet or white)

  • Five to six organic celery sticks

  • Four to five organic carrots

  • Two cups of rice

  • Two 14 oz bone broth jars (I prefer beed bone broth for extra iron)

  • One package of organic, pasture-raised boneless chicken (I prefer tenders or thighs)

  • Turmeric, pepper, salt

Get to cooking!

  1. Chop up all your veggies (brunoise) into small, bite-sized cubes.

  2. Cut your uncooked chicken as small or large as you prefer.

  3. Heat up your pot with oil (avocado or olive oil), and cook your onions first.

  4. Once onions are cooked through (they should look translucent) add your other veggies.

  5. Once the veggies are cooked down, add the rice and seasoning.

  6. After stirring, add the bone broth and chicken.

  7. Allow the stew to boil, then turn it down to simmer and cover for about 15 minutes.

  8. The rice will begin to absorb the broth during this time.

  9. Enjoy now or later!

You deserve to enjoy the food you eat while also fueling your body. Treat yourself right!

Stay Nourished,

Grace.
