Farmer's Breakfast

This breakfast will keep you full and fueled for the day.


I especially love my mini potatoes; this is because, the act of steaming and freezing your potatoes creates a resistant starch. Resistant starch acts as a prebiotic, which helps create good bacteria in your gut. It is also very easy to meal prep these potatoes for the week :)


Eggs --> 12-18 grams of protein

Cottage cheese/ sausage --> 12/17 grams of protein

--> Around 35 grams of protein


I often sub the fruit I use based on what is in season.



Ingredients

  • 2-3 pasture raised eggs

  • Mini potatoes (steamed, frozen, then reheated)

  • Organic arugula or spinach

  • Fresh fruits

  • Sourdough

  • Sauerkraut

  • Organic, pasture-raised chicken sausage or Cottage cheese (Good Culture is my favorite). I switch out with the two for a good protein source.
